Food & Nutrition Friday: Cauliflower Beef Bowl

When I was first diagnosed with diabetes in 2019, cauliflower was gaining popularity in low carb dieting.

Cauliflower was my first choice as an alternative to rice and potatoes until I found other choices.

As of now, I will only eat them roasted with other vegetables or in the occasional cauliflower mac and cheese dish.

Cut up caps.

I've never tried stir fry at home. As you can see I sliced the caps. I have leg quarters defrosting. I have soy sauce, ginger. Not quite sure how to cook it. Taking advantage of the cooking bug. Pennsylvania Tradition #Happynewyear

Pork & Sauerkraut

I make mine in the crock pot.

Pork Loin
Sauerkraut
Small Potatoes
salt & pepper
G. Washington Golden Seasoning

I layer the potatoes at the bottom of the crock pot and add salt & pepper and the golden seasoning.

Then 1/2 the sauerkraut.

Then the pork loin and salt & pepper the meat, layer the rest of the sauerkraut on top.

Cook about 4 hours on low setting. It's done when the pork is no longer pink and the potatoes are soft.

It's meant to add luck 🍀 to the New Year! 🥳🎉

It's usually one small bag of potatoes about a 1-2 pound pork loin and 2 pounds of sauerkraut. 1-2 packages of golden seasoning and salt & pepper to taste. I don't really follow recipe directions when I cook - so it's hard to say exactly.

Vegan "fish" and chips

Today I tried out a recipe for making vegan "fish" and chips out of canned artichoke hearts and potatoes! The recipe included dill, nori (seaweed), pickle juice, and lemon juice. It turned out really well and wasn't that difficult to make. I am not vegan, but I don't like fish, so this was a nice faux fish option for me!

It's FINALLY warm in Buffalo, NY and while places are still closed for dine-in options, that means we can make some delicious "mock-tails" or cocktails - whatever floats your boat.

If you have a go-to refreshing drink that gives your taste buds all the feels, cools you down, and makes you enjoy your day that much more, SHARE that recipe pleaseeee.

My favorite mocktail (besides my grandma's homemade lemonade):

Blackberry Vanilla Mocktail:
👌1/3 cup fresh blackberries
👌Juice from 1/2 a lemon
👌1/4 teaspoon vanilla extract
👌1/2 teaspoon honey
👌Club Soda or Sparking Water

You could use a simple syrup that would help with the taste even more in replace of honey.

I can’t always get up, but I can cook!

I love cooking so much, and I’m just really excited because I started a food blog today! It’s called Close the Cookbook and my first post was a tea party spread. I worked really hard on it!
